I'm always in search for a good margherita pizza. For me, Italian food is better simple. I adore tomatoes and basil, and the two together is heaven for me...especially in pizza form.
Pizzeria Libretto is a place that serves authentic Neapolitan pizza. Believe it or not, there are a set of guidelines, proposed by the Associazione Verace Pizza Napoletana, on how to make true Neapolitan pizza. Neapolitan pizza is supposed to be elasticy, and should be easily folded like a pamphlet (or libretto), hence the name Pizzeria Libretto.
Libretto's pizzas are baked quickly for 90 seconds in a 900 degree wood burning oven that was hand made in Naples by a 3rd generation pizza builder. Our pizzas came in less than 5 minutes of ordering, and I was not disappointed.
I ordered the margherita D.O.P. pizza: tomato, basil, and Ingersoll fiore di latte mozzarella, that's it. The crust was thin and perfectly cooked, and the tomato and cheese tasted very fresh. We were offered chili flakes and chili oil, but my pizza was good just the way it was.
CK, being the mushroom lover, ordered the wild mushroom pizza. Served with the mushrooms were tallegio cheese, Ingersoll fiore di latte mozzarella, and herbs. This pizza had a very strong mushroom taste. For a pizza topping, I prefer the button mushroom over a wild mushroom.
After the pizzas, I was craving a salad so I ordered the Cookstown Greens with shaved fennel, and Champagne vinaigrette. This was a very refreshing salad.

Libretto does not accept reservations (unless you are a party of 8 or more), so be prepared to wait in line on weekends, especially if you are a party of 3 or more. Luckily, we were only two people. Some of the bigger groups originally waiting with us in line were still waiting by the time we finished our meal.
